		<description>I love shanks of all kinds; this recipe sounds fabulous, and I can see how there would be only naked bones left. I've made osso buco lots of times, but of course, one feels worried about the treatment of the animals in the veal industry. So recently I procured pork shanks (and they are the most enormous things you've ever seen) from my local meat guy, and I'm going to try making pork osso buco.</description>
