Postcard from Hoi-An
After a marvelous dinner at Morning Glory in Hoi-An (my favorite fare of the trip so far) we went back to the restaurant the next day for a cooking class. I’ll be posting recipes after I get home and have a faster internet connection.
Pictured are the ingredients we used to marinate boneless, skinless chicken thighs – yup, we used all of them and the results were fabulous, though I went a tad heavy on the chile paste.
When I get home I think I’ll train the grandkids to do Viet Namese-style mise-en-place for me.

Oh, how I am loving seeing your pictures and reading your thoughts about Vietnam. I was there in November with our son and I adored every minute and every place on the trip and we both loved Morning Glory. We were just sorry that we found it at the end of our stay in Hoi An. I’m now about to catch up on the rest of your fabulous trip.

Well, I just want to know if you had a new wardrobe made for you in Hoi An….
And by the way, as a child, I used to eat my p–s one by one with milk, like little horrid green pills.
